Potato Cakes

Recipe Serves 4

We have served this potato dish with Big Breakfast for Holidays instead of hash browns and as a side dish with Ribs and Brisket. It’s an easy and delicious addition to your meals.


Ingredients

2 medium Ucon Gold Potatoes – Grated
1 small Red onion – Grated
½ c. Flour
1 Fresh Egg
½ t. Salt
½ t. Ground Black Pepper
½ c. Coconut oil and butter for frying

Instructions

Place all ingredients in medium size mixing bowl. Can add chopped peppers and grated cheese if desired. Heat griddle or iron skillet and pour on oil and butter mixture. Scoop potatao mixture and flatten out on the grill. Cook until browned and crispy on each side. Serve in place of hash browns for breakfast or as a side with any grilled meat.
